build-deps: Make compatible with CMake 4.x

Description

Build is failing due to CMake updating to v4 in some build environments.

Short term solution could be to install/compile an older version of cmake. Long term, the project needs to build with newer cmake.

The failures may mostly be from dependencies. This PR (LizardByte/build-deps#415) attempted to update some of them, but it was not enough to solve all the build errors.
