This PR is sort of in direct competition with #4, but I've moved it here so that the focus is on this tutorial exclusively. Maybe as #4 stays as a staging ground, more and more tutorials get moved to their own PRs ¯\_(ツ)_/¯
There are some weird spots to clean up in this notebook, but the migration is mostly done for this one, I think?
