This changes all existing ITK Python Package versions from v5.1.0 to v5.1.0.post2. This required changing references in build-test-package.yml and setup.py.

Could the version in setup.py also be bumped from 1.1.1 to 1.1.2? We will then release this new version.

This required changing the ITK Python Package to 5.1.0.post2 in
setup.py. Because we are updating the package, we must incremement the
itk-anisotropicdiffusionlbr version from 1.1.1 to 1.1.2.
