We need to improve observability of the osparc platform

The point of this issue is to improve our ability to "dig into" the osparc-simcore stack when we detect issues (e.g. in tests or by users). Here, observability is meant in the sense of https://github.com/blueswen/fastapi-observability, which serves as an inspiration.
