[Indexing] How and where we document/define these

Current schemas document what payloads will be. We should also aim to document what "known" indexes we support, their descriptions and what messages we expect to populate them.

This should be documented against the storage mechanism. I'm going to move this issue to the Docs repo so we can make sure its written up there.
