Fix CI not running tests in given versions #176
Description
Although we instruct CI to run with multiple .NET versions, it looks like it's running tests against latest version only.
Acceptance criteria
- Have tests running against the expected .NET version in CI.
- Ensure no hardcoded versions will cause issues in tests or in production.
