Closes Slice 5 DoD #6. Reframes docs/security.md Layer 5 to make explicit that the router is THE policy enforcement point for egress, while the K8s NetworkPolicy and iptables egress-guard are safety nets that fail closed only if the router is bypassed or compromised. docs/architecture.md and README.md were already reframed correctly in earlier slices; security.md was the remaining gap (the principles.md reference to docs/security-model.md resolves here).
