Evaluate if it's possible to build the Cosmos Spark connectors using Java 21. #38283

Description

Currently, we build the Cosmos Spark connectors using Java 17 even if their tests run using Java 8 and 11. When I tried to build said libraries using Java 21 I kept getting errors but I believe it should be possible to build these libraries using this version of Java by updating some dependencies. Let's investigate if this is even possible so we can avoid making exceptions for these libraries in pipelines such as the one for generating Aggregated Reports.
