[Feature Request] Add more detailed source classification for the S3 GET / PUT API

What problem are they facing today?

Currently, the S3 GET / PUT API statistics only include the count and time consumption at the global level, while GET / PUT requests can originate from various sources, such as Compaction, Catchup Read, ...

It is necessary to add a new source Label in the Metric to facilitate more detailed observation.
