Handle 7.0 breaking changes

Main thing that I saw was relevant was replacing doc[field].values with doc[field] ... would be good to get the ES version on startup and then reason on that? double checked and I don't use .values anywhere

Oh actually there is a breaking change, the hits count has changed in format(!) from being an in to an object:

    "total": {
      "relation": "gte",
      "value": 10000
    },

(or eq is < the max number)
