UI Plugin: Investigate and outline MC default values that need attention

During end to end of management cluster creation testing we have hard-coded some provider defaults which may not be optimal for all customers. This ticket tracks the work involved to review default values for all MC creation workflows across providers, and create GitHub issues to track any necessary changes.
