Are there any plans to create a single installer.sh like other asahi distros?

Not particularly. What would the script do? Actual installation is pretty much one command aside from partitioning. I haven't seen any of the other scripts, do you have pointers to ones you think do useful things?

On the other hand there was this poor soul who wiped his disk typo-ing a command so maybe a script would be less dangerous.

That grabs the installer from asahi, but uses a separate image.

I'm tempted to give it a shot, but I'm traveling for the next two weeks, and won't be able to mess around with it until I'm back home.

I’ll have to look more into the requirements and image layout but in general I am not a huge fan of just splatting an image into a partition.

I think this would be really nice.
Especially after (accidentally) deleting my RecoveryOSContainer
