Some metadata is not consistently included in the FHIR patient resource #47
Description
This was the case for
- telecom https://github.com/thomasbtf/document-anonymization/blob/master/workflow/scripts/extract-personal-data.py#L35
- phone https://github.com/thomasbtf/document-anonymization/blob/master/workflow/scripts/extract-personal-data.py#L76
We should include a general test if the meta data (dictionary key) exists.
