It would be great to pin or keep both the Explorer and Query panels open in Surrealist at the same time, OR potentially even better, be able to open 2 or multiple instances of Surrealist, so that we can position them (one with query and one with explorer) and move them as we please amongst existing windows.

This would be fantastic. In fact, I think its an absolutely crucial feature to have.
I just started using Surrealist with the v2 release of surrealdb and v3 of surrealist, and was immediately struck by how this wasn't possible.
I imported a (hard to find) sample dataset, and then wanted to run queries on it but have no knowledge of the dataset. So, I'm constantly flipping back and forth between the explorer and query views. It is nearly unusable like this. The Queries sidebar is far less useful than being able to see the explorer (and perhaps even its contents).
Even better than just explorer and query being side-by-side, would be actual user-configurable panes with tabs - as we can do in VS Code - rather than opening multiple instances of surrealist.
