Several questions from a newbie

First I am completely new to Flutter, Dart, and flutter-quill and I have a number of questions. I did a search of issues and discussions, but I am sorry if any of this is a duplicate. Let me start my saying that I have a windows WPF app I wish to port to MacOS. I tried Avalonia UI - but it doesn't cut it (no rich text editing, issues with .NET not being fully compatible with what I need to do, etc.) . All my comments below relate to Windows 11 desktop running the example.

1. Selecting text - I expected if I select text I should be able to change the foreground and background colors. I can't. If I pick a new foreground color it doesn't change - it stays black. If I pick any background color, sometimes works, sometimes it changes the background to black. I am working to try and find the repeatable steps to reproduce the problem.
2. Copy and pasting from a word docx document, the format is not pasted (font color, size, etc.) Is this expected behavior?
3. Is there an easy way to configure the tool bar so not all options are displayed?

Ignore 1 - I can not reproduce it after rebuilding the example - probably pilot error.
