I opened an issue in nuxt/framework here: nuxt/nuxt#15237 to see if this is a bug or feature. If its a bug we may not need to fix it here but rather wait for an upstream fix in nuxt.

So, in nuxt/nuxt#15237 it was confirmed that runtime config is de-/serialized -> I added this to the official nuxt docs via a PR.
