How do I configure it to install on OpenWRT? Or can we just use the default configuration?

This might point you in the right direction:
https://docs.scion.org/en/latest/manuals/install.html#openwrt-packages

You should also be able to upload and install the packages with the management GUI. However, configuring SCION (the files in /etc/scion) still needs to be done manually. There is no UI yet.

The default configuration files are minimal; you need to write a proper configuration. Openwrt makes no difference in that respect.
