Feature Description

I would like to be able to have auto complete turned off by default so that I can enable it with a keymap when I want it. Is this already existing? I've tried a few things but can't get it to work!

Yes, what you want is to use completion.menu.auto_show, for instance something like this will do it:

Just doing completion.menu.auto_show = false should be enough

That has almost worked! But it still shows the function arguments when inside brackets!

Sounds like you have signature.enabled = true, you can either disable it fully or toggle it with a keymap (default <C-k>) and set signature.trigger.enabled = false
