I just started using this plugin. According to the doc, I can get an MHTML file for each page. However, the only thing I get from the Download folder is a txt file with a UUID being its name.

I have a similar issue. The filename is right but the file extension is always .txt. I had to manually change it to .mhtml for it to work as before.

I'm using Chrome 78.0.3904.108 on Windows 10.

I can also reproduce this on the latest version of chrome on Ubuntu.
