Docs are failing on ReadTheDocs

I'm pretty sure the issue is the recent conda-forge issues with gdal/rasterio. #2691 fixed the doc build on Travis, but we still have the issue on ReadTheDocs.

This is potentially a blocker for new xarray releases.
