[FEATURE] Support k-NN plugin in integration tests

In #489 support for k-NN vector types was added. Integration tests for this were also added but unable to run in CI due to missing k-NN plugin.

What solution would you like?

Add k-NN plugin to OpenSearch used for integration tests in CI.
