[DOC] Confirmation in the docs that sorting by a script is supported

I can’t find any mention in the docs of sorting by a script (I would expect it on the Sort results page). Sorting by a script was supported in ElasticSearch 7.10 (source) and I see code referencing this feature in the OpenSearch repository (source).

I have not tested to confirm script sorting works in OpenSearch but it seems like it should? It would be nice for the docs to confirm this.
