docs(census): re-stamp the census artefacts on the callee-shape fix

`--write` moves exactly the two provenance lines and no other byte, which
is the artefact-level statement that the callee-shape repair changes no
published figure: the corpus has no call site whose classification it moves.
The stamp now names a commit that carries the shipped instrument rather than
one that carries the defective one.
