fix: Build for Swift 5.x on Linux

• Revert build(deps): bump swift from 5.10-jammy-slim to 6.0-jammy-slim #75 and don't build for Swift 6, Parse-Swift is not ready for a minimum deployment of Swift 6
• Bump versions in CI
