What are you using now? Typically folks are using a CNI that implements Kubernetes NetworkPolicy - https://kubernetes.io/docs/concepts/services-networking/network-policies/

Network Policy: Implementing networking.k8s.io/NetworkPolicy API by high performance ovn ACL.

It seems like OVN supports network policy so that might give you what you want. Knative defers to Kubernetes for that type of isolation.
