Hey @burtenshaw! Just wanted to check with you if the failing Docker Builds for the envs is something that you'd want to prioritize. I've had #466 for some time now.

It migrates most of the remaining envs to uv and fixes dependency version conflicts. I have tested it functionally with the scripts/test-docker-builds.sh file that I had added earlier. I'm also willing to iterate and fix all the environments in case we find any more failures, if my changes get merged.
