Would it perhaps be possible to output the iConsole data via Bluetooth again - but this time using the FTMS protocol? This would then probably allow to use iConsole devices with apps like Zwift or Rouvy. If not as an app on the smartphone, perhaps a Raspi would come into question?

Sure.. you might want to have a look at https://github.com/haraldh/iconsole which is much easier to experiment in python.
