org-rename: update references to GitCredentialManager #1141

The GitCredentialManager org is being re-named to git-ecosystem. In light of this, update references to GitCredentialManager to instead reference git-ecosystem.

Will leave this in draft until the org is re-named, at which point the failing check (Check for broken links) should pass.

better to update to the current URL.
