Cleanup default configurations

We have a few files that provide a "default" config - most of these expose an admin interface

we should either disable the admin interface in any configs provided by default eg in Docker containers, or at least add a comment about not exposing this to the public internet

it would also be good to consolidate/rationalize the default configs
