Move information about usage of field types and analysis components to cluster stats

@jasontedor suggested moving usage information about field types and analysis components introduced in https://github.com/elastic/elasticsearch/pull/51031 from the usage API to the cluster stats API, which is more aligned with what we have been doing until now, e.g. with information for bundled JDKs.
