Update existing document endpoints to handle new payload fields and responses.

Related: "Front endpoints - v1 documents/tables endpoints" from the document

Todo

  • Update POST payload to include mimeType and title fields for documents
  • Update GET response to include new fields from nodes table
  • Make fields optional initially for backwards compatibility
