Similar to #63180. This remove the solution crawler work to report the number of references/documents a project has. We can't find any consumers of these telemetry data points (though we're still checking a few more places to see if anyone is using them). And this adds a lot of complexity for us maintaining solution-crawler just for these cases.
Furthermore, this information seems to be something that would make much more sense for the project-system to report instead of Roslyn. It already has to deal with all projects, so it can report whatever interesting information about this is actually needed if someone has a true use case they're trying to answer.
