This PR adds the 'SafeAreaEdges' UI test category to the test pipeline configuration. This is a follow-up to PR #31655 which introduced the new SafeAreaEdges test category but didn't include it in the actual CI pipeline execution.
- Adds 'SafeAreaEdges' to the list of UI test categories that run in the pipeline

Follow up from #31655 where a new UI test category was added, also add it to the UI test pipeline so that it actually gets tested
