Can this not just be done with a judicious FFMPEG one-liner?

yeap i think at the low level it will be quite trivial - mainly involved is adding the option to menu / if else logic etc. the recording from usb capture is quite hacky right now though so it might be a good time to try improve that a bit to while at it.
