Upgrade to Symfony 7.4 & PHP 8.5

## Description

- Set symfony require to 7.4.* on composer.json
- Update docker configuration with PHP 8.5
- Update github workflows with PHP 8.1 to 8.5 and Symfony ^6.4|^7.4|^8.0
