I haven't heard of Nextcloud12, but if you'd like to take a shot at writing a Service file for it, I'd be happy to review it and look at including it.
There's no real way to have a generic log in button via this plugin, without configuring access to some other service that would complete the OAuth connection (and then using them as your authentication service). You could feasibly use this to talk to/connect with something like Twitter or Google to authenticate you as a specific user, and then use that set your local active user account, but that would all require setting up the connection to a specific service, and a chunk of custom implementation to handle all the auth piece.
Nextcloud12 has build in OAuth2 support and might be a nice additional plug-in to get access to various functions and calendars etc.
I am also wondering if this plug-in can be used to have a general OAuth2 log-in button under /wp-login.php ?
