[WIP] Solution for static assets: vite-plugin-shopify-assets

Hey @montalvomiguelo, I made this companion plugin to be used with vite-plugin-shopify: vite-plugin-shopify-assets.

I know the docs are currently not great, but I was wondering if you'd like to take a quick look?

The overall idea is that it replaces both vite-plugin-static-copy and vite-plugin-shopify-clean. The package has some comments as well, in case you want to see what is it doing internally.
