Old IR-12

Hello,
I'm connecting Artisan to an old Diedrich IR-12 (early 90's) that never had anything other than a dial thermometer as a temp reading.
I added an Omega temp controller/reader years ago and have now added a temp probe and RTD's to it, to start using Aritsan. I seem to be having trouble setting it up with artisan. Obviously this old roaster isn't supported and can't seem to figure out how to assign Phidget, probe/RTD's to the appropriate readout. Any help would be appreciated. I've attached a diagram of my setup for reference.
