With macOS Big Sur, it does not seem possible to inject Catalina's AppleBCM5701Ethernet successfully to restore Ethernet on iMac11,x and iMac12,x (Ref)

To resolve, OpenCore could support the ability to exclude kext personality from prelinked cache under Kernel -> Block
