Is it actually possible have HA poll the Solaredge inverter (SE8K) every second, or will it eventually choke the device?

It should work, but if it doesn't you can just increase the time.

It won't poll every clock second. It will be X seconds after the last successful poll is completed. So if it takes 2 seconds to run a complete cycle, the next poll will be 1 second after that.
