Deploy all payment types to Polygon Mumbai #1219

Problem

Mumbai only supports ERC20FeeProxy.

Proposed Solution

Deploy all other payment types.

  • Update the smart contract scripts and run them.
  • update the docs

Mumbai is being deprecated together with Goerli, see https://polygon.technology/blog/introducing-the-amoy-testnet-for-polygon-pos.
Might be better to deploy to the new Amoy testnet.
