Create a version system for backup processors

gemmaBackups should be aware which version of gemma.R was used to create the backups and change the processing functions accordingly

Changes in processors without changes to api don't need to be propagated. And processed data works on its own making this less necessary. A better way to do it however would be to just copy functions to the created package
