I've got a project currently where the extra resources of the Pi Pico is a good fit, except for its lack of analog pins (it has up to 3, but i need a few more than that). There's I2C/SPI ADCs out there(e.g MCP30008, ADS1015) which seem pretty reasonable - are they likely to be supported in the future?
