This will be a nice started that users can start with, instead of everyone having to create their own from scratch.

Have a panel for eigenda-proxy in https://github.com/Layr-Labs/optimism-exp/pull/2/files#diff-8dcf818245292470a983450f13c33f9a899ad692c3a3fb47efa92ee2148d194f, which I can pull out and make a standalone grafana dashboard just for proxy info. I'll make a PR later.
