Re-organize Monster Folder and Structure

Re-organize the entire Monster folder and it's respective monsters.xml structure to have a better representation of a separation of types and better organization so we always know where to look for something.

This entails the following:

• Remove duplicate monster files
• Re-organize folder structure and file localization
• Re-write monsters.xml to better represent new folder structure
