KurrentDB integration cleanup

Cleanup some of the variables and references from the recent addition of KurrentDB integration in #895 .

- Client version update to v1.1.0
- Replace connection string from `esdb` to `kurrentdb`
- Replace environment variables from `EVENTSTORE_` to `KURRENTDB_`
- Replace health check to only use the `KurrentDB.Client` dependency
