Update package dependencies, enhance ChartGPU functionality, and improve documentation

- Bump package
- Add new dependencies for testing and coverage tools.
- Introduce createdWithOptionsRef to manage options and theme changes in ChartGPU and useChartGPU components.
- Update chart rendering logic to prevent race conditions during initialization.
