Currently, when I select "Extreme" under "Tracking protection", the "Hide your User-Agent" option is enabled. The result is this;

This should not be done. Google Chrome has reduced the UA and the string that used to show Device Model has been replaced by a "K" for all devices. Therefore, the "K" is a string that does not need to be removed to protect privacy (it would look bad if it were removed). https://www.chromium.org/updates/ua-reduction/
